Today marks roughly 130 days of being on a zero carb diet. While my weight loss hasn't been as phenomenal as I had hoped (I am weighing consistently 200 lbs in the morning) I have been losing weight and feeling good while doing it. Probably I have made some mistakes along the way which hampered my progress as well.
Speaking of mistakes, I am drinking coffee right now. I'm actually in withdrawal from caffeine and experiencing a very minor head ache. Today I will be making ground beef. I picked up a few tubes of medium ground beef for just under $5 a lb and plan to spice it and add some cheese and egg and fry it in tallow. I make my own tallow from beef suet and it is great for cooking with.
Yesterday I made chicken thighs cooked in cream cheese and butter and they were really good. Unfortunately I couldn't find any super cheap roasts or steaks so I'm having to make do on eggs and cheese and ground beef and chicken thighs alone. le sigh.
I probably won't eat my first meal until around noon, five hours from now. Whenever I feel like eating. That is the best part about this diet, I don't have to worry about what to eat, so long as I stick to animals and animal byproducts (and coconut oil, cause why not).
